Summer Slaw

Summer BBQs are here, so let’s talk about healthy vegetable-based sides to bring to your next gathering. This Summer Slaw is colorful, flavorful, and packed with nutrition.

Slaw ingredients:

½ head of purple cabbage, sliced

5oz shredded carrots

1 red bell pepper, thinly sliced

1 mango, thinly sliced

1 stalk green onion, thinly sliced

Mint, chiffonade

Dressing ingredients:

1/3 cup Extra virgin olive oil

Citrus of choice (using ½ lemon today)

1 tsp Dijon mustard

Honey, to taste

Salt, to taste

Pepper, to taste

Instructions:

In a large bowl, add all slaw ingredients. Mix well.

For the dressing: In a small bowl, juice ½ lemon. Add Dijon mustard, honey, salt, and pepper. Slowly drizzle olive oil in while whisking continuously. Taste and adjust as needed.
